I've eaten at Bussola twice, and I've been really happy with the experience both times.
During the most recent experience, I asked the hostess that was standing at the door, if I could speak with the manager about my food allergies, as soon as I arrived. Moments later, the manager appeared and he took my concerns seriously. Bussola does use some tree nuts, but no peanut products are used. Still, I explained my allergy and the precautions that I wanted the kitchen to take, and I gave him a chef card to give to the kitchen staff.
When the server came to our table for our order, he knew about my allergy, because the manager had explained the situation to him. When our food arrived, the manager was right there to ensure that the correct meal made it to me. Within about 2 minutes of starting to eat, the manager was back and wondering how I was doing. This is the type of service that big, upscale hotels are famous for. I was also happy to see a note on the bottom of the menu, which shows you symbols (also placed next to menu items) to indicate foods that contain certain popular allergens, such as nuts and fish. This shows that the restaurant takes food allergies into consideration. I was surprised to see this on so many menus in Dubai, but its great to see.
I ate an arugula salad and some type of vegetarian pizza. The quality of the food was great. The pizza is some of the best I've ever had, anywhere. Also, the atmosphere on the upper patio of this restaurant, with a view towards the water and Atlantis on the Palm, is pretty fantastic.
This has become one of my favourite restaurants in Dubai, and it will be one of the first restaurant's that I go back to when I visit Dubai again. I really wouldn't hesitate to try this restaurant. As always, communicate about your situation clearly, and make sure your message gets to a manager and a chef.
